Nutrient Packed Breakfast Frittata's!

Pre make them and leave them in the fridge.
Then in the morning all you have to do is microwave them!





Ingredients
Any veges you have in the fridge!
* Zucchini
* Eggplant
* Mushroom
* Spinach
* Onion
6 whole Eggs
1 egg white
Salt


Directions
Pre-heat oven to 180 degrees celcius
Saute off the veges in a pan until veges are just cooked, 
they will continue to cook in oven
Place them in a bowl
Crack eggs and egg white in vege mix
Season
Divide up into 12 muffins
Cook for 12-14 min
